The Piemontese (Piedmontese) is way ahead of any other beef breed in its ability to kill out at 70% and bone out at 83% - and combined with its reputation for lean, flavoursome beef, it’s maternal qualities and longevity it’s no wonder this Italian breed is attracting a surge of interest from UK beef producers.
Piemontese are not only double muscled but are easily calved and quickly produce this super lean but tender beef. This beef is held in such high regard in Italy that it is called the "Queen of Beef" and there is always a shortfall in the demand for it over there.
Piemontese cattle originated from the region of Piedmont in northwest Italy. They are characteristically a medium-sized beef breed of grey-white colour though the calves are fawn when born. The first herd book was opened in 1877 after the appearance of ‘double muscling.’ They are raised for primarily for their meat, seen as a premium product in Italy. But some are also milked to make the region's traditional cheeses – Castelmagno, Bra, Raschera and Tomo Piedmontese.

Piedmontese cattle are different than any other breed of cattle as they carry a unique gene (myostatin) that reduces fat while improving tenderness.
An attractive feature of Piemontese meat is the health benefits. It is the lowest of all breeds for cholesterol – and the highest for essential fatty acids – omega 3 and 6. The meat is also extremely tender, and because of the lower fat content there is a very high meat yield – up to 14% more than other breeds.

The leanness and tenderness of Certified Piemontese beef is the result of the Piemontese gene. The genetic makeup of the animal is such that the breed naturally develops significantly more muscle compared to other breeds, but very little corresponding fat. At the same time, the beef remains tender, so the result is lean beef that doesn’t rely on fatty marbling for tenderness.
The unique lean and tender attributes of the breed were first noticed by farmers in the Piedmont region of Northwest Italy in the late 1800s. Today, at Westcott Piemontese we are raising Piemontese cattle on our family farm for consumers who expect premium flavour and tenderness, but aren’t willing to compromise on nutrition.
